Wine Maker Notes: By the recommendation of our wine consultant, Clark Smith, this Cabernet Sauvignon underwent the process of micro oxygenation. This process infuses oxygen very slowly in a controlled manner to layer the tannins and build the structure across the palate. We are loving the results, which is a wine that drinks like it was barrel aged for much longer than 18 months. Chocolate and cedar spice on the nose. The palate is very refined now but will get bigger as it develops, will age well for 10-15 years. Flavors of chocolate covered cherries, very rich and smooth. $39.99

Wine Maker Notes: Our first vintage of standalone Syrah! Our wine consultant and professor at UC Davis, Clark Smith, tasted the Syrah berries two years ago and determined that they were lacking structure and tannins. Not to worry, he told us, for there is a special technique that has its roots in the Rhone Valley of France. The winemakers will add Viognier skins to the fermenting Syrah must, lending the finished product noticeably brighter tannins and a rounder body. We followed his advice and ended up with a great wine that has aromas of white flowers, cherry, and violet, with notes of cherry and spice on the palate and a nice tannin finish. $39.99
